Ingredients:

  • 600 g chicken liver
  • 1 tablespoon of flour
  • 3 tablespoons of oil
  • 2 onions
  • 3 hard apples – dessert varieties are recommended
  • pinch of salt
  • pinch of pepper

Method:

Clean the liver from membranes, rinse and drain. Sprinkle with flour. Put the liver in a hot pan, and when the water evaporates, add 1 tablespoon of oil and fry it, turning it from time to time. Peel the onion and julienne it. Add to the liver, and let it brown lightly. Wash the apples, cut into pieces, remove the core, and add to the liver. Add 2 more tablespoons of oil and sprinkle it all with pepper. Simmer covered, for about 5 minutes. Sprinkle the dish gently with salt and serve with rice or potatoes.
