• 1 radicchio
  • 2 cobs of chicory
  • 150 g of cheese
  • 2 onions
  • 1 apple - table varieties are recommended
  • handful of walnuts
  • Dressing:
  • pinch of peppera couple of tablespoons of grape seed oil
  • a few teaspoons of white wine vinegar
  • pinch of salt
  • freshly ground black pepper


Rinse and dry chicory and radicchio. Put a few leaves aside for decoration and cut or tear the rest into pieces. Slice the cheese into thin strips. Wash the apple, peel it, remove the core, and cut the apple into thin sticks. Chop the walnuts. Place the salad ingredients in a salad bowl with parsley. Dressing: mix grape seed oil with white wine vinegar, season to taste with a pinch of salt and freshly ground pepper. Sprinkle the dressing over the salad and decorate with the leaves.
