Ingredients:

700 g fillet of cod, without skin or bones
2 tablespoons wheat flour
1 teaspoon salt
0.3 teaspoon cayenne pepper
3 large tomatoes
1 tablespoon vegetable oil
1 large apple
2 green peppers
150 ml water
1 tablespoon butter
parsley leaves for decoration

Cut the cod fillet into portions. Mix flour, salt and cayenne pepper and sprinkle this on the fish. Fry the fish in butter and oil until it takes on a golden colour. Put on a heated plate and keep the fish warm. Dice the peeled tomatoes, green pepper and apple. Fry the tomatoes, apple and peppers for a few minutes in fat from the fish. Pour in water mixed with lemon juice and heat for 5 minutes. Put the fish in the sauce. Decorate with parsley leaves. Serve with potatoes or rice and lettuce.
