Dessert is most often associated with a snack that contains simple carbohydrates. Fortunately, recently there have been more and more ideas for low-calorie desserts. They are the opposite of traditional desserts. It is worth using, for example, apples to prepare them. The great advantage of these fruits is their low calorific value. One medium size apple (100 g) contains 60 kcal. We can use apples in the kitchen to bake a classic apple pie in a light version, but there are also many low-calorie snacks, the consumption of which will not affect our weight. The following suggestions for apple desserts are low in calories.
Apple pie on shortcrust dough
Ingredients for the dough (26 cm cake tin):
- 300 g whole wheat flour or a mixture
- 100 g butter
- 70 g xylitol or erythritol
- 2-3 spoons of 18% cream
- 1 teaspoon of baking powder
Ingredients for the apple filling:
- 2 kg apples
- 2 teaspoons of cinnamon
- 3 teaspoons of gelatine or agar agar
- 4 tablespoons of almond flakes
Cut the butter into pieces and place in a bowl. Add the flour, sugar and baking powder and knead the dough. If the dough does not want to come together, add cream. Form the dough into a ball, wrap in cling film and place in the freezer for about an hour.
While the dough is cooling, prepare the apple filling. Pour about half a glass of water into the bottom of a large pot. Add the diced apples, cover with a lid and cook until the fruit has the consistency of a mousse with fruit chunks. When they are ready, add gelatine dissolved in a small portion of water, cinnamon and mix thoroughly.
Line the cake tin with baking paper. Divide the chilled dough into two parts, grate ¾ to the bottom of the cake tin, and leave about ¼ for the top. Knead the dough shavings in the cake tin with your fingers, prick the dough with a fork, cover with a piece of baking paper and put in the oven preheated to 190°C with the top-bottom option for 15 minutes. Put the prepared apple filling on the baked bottom and sprinkle with the rest of the dough. Bake for another 25-30 minutes at 170°C. Cool the baked cake and sprinkle with almond flakes.
Rice with apples and nuts
- a bag of brown or wild rice
- 2 medium-sized apples
- 2 spoons of walnuts or almonds
- 2 spoons of dried cranberries
- 2 spoons of honey
- ¼ teaspoons of cinnamon and the same amount of cardamom
Cook a bag of rice. Peel the apples, remove the seeds and cut the apples into slices. Pour about ¼ cup of water into the pan and add the apples, then cover with a lid. Let the fruit soften and add the cranberries, cinnamon and cardamom. Put the cooled rice into a bowl, add apples and nuts and mix. Pour honey over the dessert.
Baked apples with oatmeal
- 4 medium-sized apples
- 3-4 spoons of oatmeal
- 1 spoon of raisins
- 1 handful of walnuts
- 1 teaspoon of cinnamon
- 1/4 teaspoon of ground cardamom
- 2 spoons of agave syrup or honey
- 2 teaspoons of butter (optional)
Toast the nuts in a dry frying pan and chop into small pieces. In a bowl, mix all the ingredients for the topping with roasted nuts. Wash the apples, remove the seeds, being careful not to damage the sides. Place the prepared apples in a baking dish and fill with the stuffing. Top each apple with 1/2 teaspoon of butter (optional) and cover with the cut top. Bake in an oven preheated to 180°C, uncovered, for 30-50 minutes. Baking time depends on the size and type of apples. It is best to check with a skewer on an ongoing basis whether they are soft enough and adjust the baking time accordingly. Serve warm. Pour honey or agave syrup over the baked apples.
Oatmeal cookies with apple (no flour and no added sugar)
- 1 big, sweet apple
- half a cup of oatmeal
- 1 egg
- 1 teaspoon of cinnamon
- 1 teaspoon of coconut oil
Grate the apple on a coarse grater, mix with the egg, add coconut oil, cinnamon and oatmeal. Mix everything very thoroughly and set aside for 20 minutes for the flakes to swell. Line a baking tray with baking paper, put portions of dough on the tray with a spoon, bake at 170°C with fan for about 10-15 minutes. After baking, leave on a wire rack to cool.
Cheese apple oatmeal cookies
- 100 g applesauce
- 400 g light cottage cheese
- 150 g ground oatmeal
- 1/2 teaspoon of baking powder
- 1 egg yolk
- 50 g dark chocolate
- 1/3 teaspoon of cinnamon
- some salt
- a bit of sugar, xylitol, etc.
Mix applesauce with cheese, egg yolk, chocolate, spices and baking powder. Add oatmeal and mix constantly. Form small cookies 1-1.5 cm thick. Transfer to a tray lined with baking paper. Bake at 180°C for 20-25 minutes.
